Magnesium-Rich Meals Worth Adding to Your Rotation

Magnesium rich meal

A lot of patients ask me for actual meals once they've seen which foods rank highest for magnesium. A list of ingredients is useful, but a plate of food is what actually gets cooked on a Tuesday night. These three meals lean on spinach, black beans, quinoa, chickpeas, pumpkin seeds, and salmon, foods that consistently show up near the top of any magnesium list. Black bean and quinoa bowl

Two of the higher-magnesium plant foods in one bowl, and it holds up well as next-day leftovers.

  • Ingredients : 1 cup cooked quinoa, 1 can black beans (rinsed and drained), 1 avocado (sliced), 1 cup cherry tomatoes (halved), juice of half a lime, olive oil, salt and pepper

  • Instructions : Combine the quinoa and black beans in a bowl. Top with avocado and cherry tomatoes. Whisk the lime juice with a drizzle of olive oil, season with salt and pepper, and pour over the bowl before serving.


Spinach and chickpea salad

A quick, cold option that works as a full lunch on its own.

  • Ingredients : 4 cups fresh spinach, 1 can chickpeas (rinsed and drained), 1 cucumber (diced), 1/3 cup crumbled feta, juice of one lemon, olive oil, a small spoonful of Dijon mustard

  • Instructions : Toss the spinach, chickpeas, cucumber, and feta together. Whisk the lemon juice, olive oil, and mustard into a vinaigrette, and dress the salad just before serving so the spinach doesn't wilt.


Salmon with sautéed greens

A dinner option that pairs a solid protein source with another magnesium-rich vegetable.

  • Ingredients : 2 salmon fillets, 1 bunch Swiss chard or spinach, 2 tablespoons pumpkin seeds, 2 cloves garlic (minced), olive oil, lemon

  • Instructions : Season the salmon with salt, pepper, and a squeeze of lemon, then pan-sear or bake until just cooked through. Sauté the greens with garlic in olive oil until wilted, scatter the pumpkin seeds on top, and serve the salmon over the greens.


None of these amounts need to be exact. Swap in whatever magnesium-rich vegetable or protein you already have, the point is building a rotation you'll actually make again rather than chasing a number on a label. If you have kidney disease, talk to your doctor before making a regular habit of high-potassium, high-magnesium foods like these in large amounts. The same caution I give about magnesium supplements applies to food sources too, just less urgently.
